Syrup season takes place in late winter to early spring when the daytime tempatures are above freezing and the night time tempatures are below freezing. This creates a pressure cahnge in the tree that gets the sap flowing in the tree. The harvest will continue until the trees bud, at which point the sap becomes bitter and the season is over.
We use an evaporator to evaporate water out of the sap which leaves us with this 100% Pure Idaho Maple syrup
