Our Sugar Bush mostly consists of Idaho's bigtooth maple trees unique to the western United States, known for its drought tolerance and viabrant colors. Bigtooth trees are scientifically known as Acer grandidentatum. We also tap boxelder trees scientifically known as Acer negundo.
Syrup season takes place in late winter to early spring when the daytime temperatures are above freezing and the night time temperatures are below freezing. This creates a pressure change in the tree that stimulates the sap to flow. The harvest will continue until the trees bud, at which point the sap becomes bitter and the season is over.
After RO (reverse osmosis), which takes just over half of the water out of the sap, We continue to take water out by further evaporating water out by using an evaporator, which leaves us with 100% Pure Idaho Maple syrup. We then filter and individually bottle all of our syrup.
